Piña Colada Hammantaschen Filling

- 1 20 oz. can pineapple chunks in pineapple juice from concentrate
- 1 13.5 oz. coconut milk
- 4 Tbsp. rum
- 4 Tbsp. sugar
- pinch salt
- ½ cup finely shredded coconut, unsweetened
- Cut the pineapple chunks in half.
- In a small pot, bring the pineapple chunks, pineapple juice, coconut milk, sugar, rum and salt to a boil.
- Let simmer for about 25 minutes, until most of the liquid evaporates and mixture thickens.
- Mix in shredded coconut.
- Set aside to cool.
- Use as a filling for Voilà! Hallah Hammantaschen Yeast Dough or for your favorite dough.
