This untraditional, delicious hammantaschen filling features the classic Piña Colada ingredients -- pineapple chunks, coconut milk and flakes and rum. For dough, see Yeast Dough for Giant Hammantaschen

Serves: 24 hammantaschens
  • 1 20 oz. can pineapple chunks in pineapple juice from concentrate
  • 1 13.5 oz. coconut milk
  • 4 Tbsp. rum
  • 4 Tbsp. sugar
  • pinch salt
  • ½ cup finely shredded coconut, unsweetened
  1. Cut the pineapple chunks in half.
  2. In a small pot, bring the pineapple chunks, pineapple juice, coconut milk, sugar, rum and salt to a boil.
  3. Let simmer for about 25 minutes, until most of the liquid evaporates and mixture thickens.
  4. Mix in shredded coconut.
  5. Set aside to cool.
  6. Use as a filling for Voilà! Hallah Hammantaschen Yeast Dough or for your favorite dough.
