Chocolate Walnut Filling

Chocolate Walnut Filling
 
For chocolate lovers, a mixture of chocolate -- dark, or your favorite -- walnuts (optional), raspberry jam and a touch of cinnamon. Use it as filling for our Giant Hammantaschen or for babkas and other coffee cakes.

Ingredients
  • 8 oz. dark chocolate, or your favorite
  • 1-cup walnuts
  • 2 Tbsp. sugar, optional
  • 2 Tbsp. unsalted butter, sliced, optional
  • ½ tsp. cinnamon
  • ½ cup raspberry jam
Instructions
  1. Place the chocolate, walnut, sugar and cinnamon in a food processor bowl. Pulsate to grind to small pea-size granules. Slice the cold butter.
  2. For Giant Hammantaschen, spread the jam all over the dough, leaving a two-inch clear margin. Sprinkle the chocolate-walnut mixture evenly on top of the jam and dot with butter. If you wish, reserve 2 Tbsp. of the mix to sprinkle on top of the cookie later.
  3. For individual hammantaschens, process the butter with the other ingredients. Roll the dough and cut with a circle cutter. Place a heaping teaspoon of the filling at the center of each circle and fold sides over into a triangle. See baking instructions here.
