Ingredients
1 20 oz. can pineapple chunks in pineapple juice from concentrate
1 13.5 oz. coconut milk
4 Tbsp. rum
4 Tbsp. sugar
pinch salt
½ cup finely shredded coconut, unsweetened
Instructions
Cut the pineapple chunks in half.
In a small pot, bring the pineapple chunks, pineapple juice, coconut milk, sugar, rum and salt to a boil.
Let simmer for about 25 minutes, until most of the liquid evaporates and mixture thickens.
Mix in shredded coconut.
Set aside to cool.
Use as a filling for Voilà! Hallah Hammantaschen Yeast Dough or for your favorite dough.
