Author: Leah Hadad
Serves: 12
Ingredients
Dough:
- 1 Box of Traditional Voilà! Hallah, or any of the other mixes; or, use dough from any sweet yeast dough recipe
- 1 Fast Acting Yeast packet (included)
- 2 Tbsp sugar, optional
- 4 tbsp warm milk or water, 110°- 115° F
- 1 large egg + 1 egg yolk, room temperature
- 6 tbsp unsalted butter, sliced
Egg Wash: (optional)
- 1 left over egg white
- 1 Tbsp. sugar
Cheese Filling:
- 8 oz. Farmer’s cheese
- ¼ cup sour cream
- 1 yolk
- ¾ cup sugar
- Lemon peel from ½ lemon
- 1 tsp. vanilla extract
- ¾ cup diced strawberries, about 8
Instructions
- Read instructions and prepare ingredients before starting. Place the mix and yeast in the bowl of a stand mixer, fitted with the hook attachment, and stir. Add water or milk and stir to combine. Add eggs and butter and mix on medium-low for 10 minutes, stopping to scrape down dough from hook and sides of bowl, as needed.
- Dough will separate from sides of bowl and will be soft and elastic. In a medium bowl, mix cheese, sour cream, egg yolk, sugar, lemon peel and vanilla with a spatula till smooth and creamy. Scoop dough, shape into a ball, cover with a parchment paper or plastic wrap and place in refrigerator to cool for 10 min. Roll dough into a 14” round, place in a 9” spring form pan so the edges against the sides are of even heights.
- With your fingers, pat the dough down to fit the bottom of the pan. Pour cheese filling into the center and let it spread evenly. Sprinkle strawberries all over. Gently fold the edges of the dough over the filling, leaving the middle exposed. Let rise for 30 minutes in a warm, draft-free area. Preheat oven to 350° F. Whisk egg white and sugar with a fork and brush all over the loaf. Bake on the oven’s middle rack for 40 – 50 min. Remove pie from the oven when ready and place on a wire rack to cool. Bring to room temperature before serving. Refrigerate leftovers.
